Middle Eastern-Style Beef Stew

Ingredients

  • 1.5 - 2 lb beef stew meat or chuck steak
  • 2-4 cloves garlic, peeled and chopped
  • 2-4 Tbsp chopped onion
  • 1-2 tsp cumin seed
  • 1 tsp salt
  • optional

  • 1 tsp Ancho chili powder for color
  • Grind cumin seed (coffee mill) with red pepper flakes, coriander seeds, clove, cinnamon.
  • Directions

  • Separate beef chunks or cut up chuck steak into cubes
  • Place beef into bottom of slow cooker or dutch oven
  • Spread remaining ingredients over beef and cook on low for about 4 hours (slow cooker) or until meat is tender (less time for dutch oven).
  • taste and adjust salt
  • add chili powder if desired
  • Serve over steamed rice, pasta, egg noodles, or boiled potatoes.
